Sweet potatoes are a staple around my house! So I’m always experimenting with different ways of cooking them. My families favorite are Rosemary Garlic Sweet Potato Fries!
3-4 sweet potatoes
1-2 Tbs. EVOO, Coconut Oil, Red Palm or Ghee (not AIP)
1 tsp garlic powder
2-4 drops rosemary essential oil
sea salt to taste
Peel potatoes, cut into ½ in slices & then cut into strips (I like to leave the skin ON)
Soak in Coldwater 45 min to 1 hr.
Preheat oven to 425*
toss with the fat of choice, garlic, rosemary & sea salt
Bake for about 20-25 min or until browning & crispy (cooking time will vary depending on the size and way of cut)
Personally, I like to also use cinnamon or black pepper essential oils. Experiment & see which way you like it best.
